Ingredients

  • Mutton: 1 kg (bone-in, medium pieces)
  • Oil: 2–3 tbsp (mustard oil preferred, optional)

  • Ginger-garlic paste: 2 tbsp
  • Yogurt: ½ cup (well whisked)
  • Green chilies: 2–3 (slit)
  • Salt: to taste

Whole Spices

  • Bay leaves: 2
  • Cinnamon: 1 small stick
  • Green cardamom: 3–4
  • Cloves: 4–5
  • Black peppercorns: 6–8

Ground Spices

  • Red chili powder: 1 tsp (adjust to taste)
  • Coriander powder: 1½ tsp
  • Turmeric: ½ tsp
  • Garam masala: 1 tsp

Method

  1. Dry Bhuna Base (Low Oil):
    Heat oil in a heavy pot. Add whole spices and let them release aroma. Add onions with a pinch of salt and cook on medium heat until soft and lightly golden (no browning).
  2. Flavor Build:
    Add ginger-garlic paste and green chilies. Bhuna well until raw smell disappears. Add ground spices and mix quickly.
  3. Mutton Bhuna:
    Add mutton and cook on medium-high heat, stirring, until it changes color and releases its own juices. Cook until moisture reduces and masala coats the meat.
  4. Steam Cooking (Dum Style):
    Lower heat, add yogurt gradually while stirring. Cover tightly and cook on very low flame for 45–60 minutes, stirring occasionally. Do not add water unless absolutely needed the mutton should cook in its own steam.
  5. Final Bhuna:
    Once mutton is tender and oil slightly separates, sprinkle garam masala and give a final dry bhuna for 2–3 minutes.
